I do think the default difficulty settings for skyrim and starfield in particular are a significant detractor. The combat systems work a lot better on high difficulties as (once again) one is forced to actually consider positioning, consumables, et c.

finding that bethesda games are often significantly more engaging when I play on the survival mode (if present)

I think this comes down to forcing the marker-following brain to actually engage with the strongest aspect of these games, the meticulously crafted sandbox

Going back to vanilla skyrim after years and years makes me really appreciate that there was a genuine special something to that game. Morrowind will always be 'my game', but the level of immersion skyrim achieves is remarkable
