Always center cut bone-in chops. At least 1-1/2” thick, brine for 3-4 hours. I either use rosemary toasted panko coating (sautè) or some sort of glaze (maple, honey mustard) and finish in the oven. Juice just runs out 🤤😋
Bone-in center cut chops (any thickness) are more forgiving than loin chops.
