Found a Planet that is mostly water with the tallest, most mountain-like mountains I have ever seen in my 9 years of playing.
The fun part is that the peaks are above the cloud deck and in space. No gravity and no atmosphere. You can just float out of your Corvette and hover around.
I was going for more of a camper\RV vibe. You are right though, it's very cargo hopper.
