Felt accomplished, hungry, and cold once I was done my van repairs in the depth of winter here, so made myself a fancy brunch with from-scratch buttermilk pancakes w/ Madagascar bourbon vanilla extract, real maple syrup (obviously: it’s me!), and there’s also Kahlúa in the coffee!

Saved myself some money doing more vehicle repairs myself…this time it was the blower motor (2017 Caravan with 144kms/90k miles). Critical part of winter driving, so wasn’t deferrable! $90 for the part to be shipped to my door, and less than 30min of my time. Would have been a $350-400 garage job 🤐

I actually made a Betty Crocker (website) recipe today also! Thai turkey (but I used chicken due to availability at the store I walked to) lettuce wraps ^_^ Yum

I had Thai chicken lettuce wraps for dinner with cilantro, green onion, mint, sriracha, lime juice, and peanut butter in the meat mixture~ It’s supposed to have chopped salted peanuts to serve, also, but I apparently didn’t have any at home 😭 (the sauces pictured are sriracha and hoisin)
