It was a chef pal of mine told me about it. Porcini grow pretty abundantly throughout the South of Scotland. So I’ve generally just made my own. Dehydrate the mushrooms then throw them through a spice grinder. Keeps for ages too, like any other spice.

Powdered Cep (porcini). Trust me… If you can get it (or make it) a teaspoon of that in Bolognese sauce etc is fantastic.
