My personal pick for the best example of a cover being better than the original is probably Alien Ant Farm covering Smooth Criminal.

By abusing Unicode’s “mathematical italic small letter __” symbols. Which makes that sentence an absolute nightmare for anyone using a screen reader.

The used to do this on 89.3 The Current by MN Public Radio all the time. It’s one of the original concepts the station launched with. Enough visiting artists did them live in studio that they cut an album called “Cover to Cover” just with a bunch of those recordings.
