As a trans brewer in the States I applaud you. We have our own issues too and it’s nice to see someone speaking out anywhere in the world.

I usually use about 4%. I can’t remember what Sierra uses but they’re really old school with their recipes

I like sticking a little crystal in my west coasts, but I’ve also been brewing the best part of 30 years and back in the day that’s just what we did.
