For the MC itself, the www.adafruit.com/product/5786 is nice. It has a compatible debug connector. It's in the Arduino V3 form factor, so a lot of shields could work, or you could make your own. That's what I ended up doing with KiCad.

That would be my recommendation. The 2040 might be the best bet, being a bit more mature.

Get a www.adafruit.com/product/5699 since it work well with probe-rs, a software package that allows the usual cargo run workflow to work with attached MCs.
