J.N. Hays' 'Burdens of Disease' (Rutgers, 2009) has a chapter on Medieval Diseases and Responses. It's synthesis, so the notes and further reading might be helpful. Hays' and Byrne's 2021 reference book "Epidemics and Pandemics: Ancient Plagues to Modern Day Threats" another good place to start.
