This might be one of the tastiest chilli's I've ever made and the downside to the whole thing is that it took 2 days to make.

Tomorrow we load it up with veggies and roast it in the oven until they’re tender.

Brisket is just shy of 170F now. Normally I’d wrap it and go for 203F but I think this time I’m just going to submerge it in the chili base for a few hours

This city loves to build infrastructure it can brag about, and then neglect it

It started out as short rib soup but we pivoted a bit and went with a miso broth and udon noodles.
A good handful of bean sprouts on the bottom of the bowl rounds it out nicely
