When kiddo's mom passed away, I had to quit my second job, which was a fairly large percentage of my total income at that time. Thank goodness their survivor payments were enough to replace that income. But if I would have had to wait months for an appointment to be able to get that income 1/2

My grandpa just died. Spend time with people when you still have the chance.

Fresh dough resting in a cast iron pan

I love making focaccia.

500 g flour
325 g water, 110°F
15 g kosher salt
4 g active dry yeast
Olive oil

Mix flour/salt
Add yeast to water, allow to dissolve
Add yeasty water to flour, mix by hand
Rest 12-24 hours
Form ball, put in oiled cast iron
Rest 1 hour
Stretch and dimple
Bake 25 min 450°F

Just got the brine together over lunch, and it's cooling in the fridge for bird arrival soon.

Went citrus and thyme.
