Traditional NC bbq is cooked over fresh charcoal, not the original wood itself. Using premade charcoal is not as cool but not invalid.

My favorite subject! Eberl, Mehul, Reicha are the most interesting to me. I have a list of roughly 50 composers fitting loose definition of contemporary for whom there is at least 1 recording. But the symphony was in decline until after the Napoleonic wars, so list is not nearly as rich as the Haydn
