I think any time we impose a "taxonomy" on learning, we ignore the differences between individuals. It is helpful in that we understand better how learning happens, but you know you have those kids who don't fit the "norms".

When we were looking for new textbooks, I don't remember a large number of offerings. Content was pretty similar, so the peripherals drove the purchase. The biggest problem is that textbooks tend to overgeneralize and the choices they make lead to an incomplete narrative.
