Today: beans. Use the quick soak method: boil them for 5 minutes, let them soak for an hour. Most of the carb that causes gas will be in the soaking water. Rinse well, and don't "shock" them with any drastic temperature changes, which causes the proteins to contact, slowing the cooking process.
