Even just undoing the “birdseed” reputation of millet is worth it. Fwiw I love the Maskal teff grown in Idaho. I know popped sorghum is popular now. I boil my bagels in sorghum syrup as a gf alternative to malt syrup.

Baked millet porridge is delicious.

Some people think they don’t like millet flour because it gets rancid very quickly and tastes bitter.

Since I eat gluten free and make all my own baked goods, I primarily use millet flour (mine is proso millet). I also use sorghum. These are the main millets we seem to have access to in the US. But India has so many millets.

It’s a real shame we can’t easily get some of the more interesting millets here. 👀
