He might have a "secret" recipe. There's a pub near me called the Weighbridge Inn which has a secret recipe for their 2-in-1 pies and I suspect the pastry is part of the secret. It's sold when the pub is sold so has been the same for at least forty years when I first tried it. I couldn't make it.
