Dinner last night was a boneless-skinless chicken thigh with smoked paprika, cooked on a grill pan and some mixed vegetables.

Unless your meals are catered at the venue there are a couple places to eat right there. A birriieria/taqueria almost next door and a French influenced place called La Madelaine right across the street.

Pay no attention to crusty old guy. 👀 I see the US tour will bring you to Ft. Worth TX. Not familiar with Monroe or Buckcherry so not sure if I can get anyone else to go (I'm 30 miles West). Otherwise not sure I can attend. Night driving vision not what it used to be.

A boneless/skinless chicken thigh sauteed in olive oil, chicken broth and butter with thyme and lemon juice & S&P. And a side of blanched white potato cooked with butter and chopped parsley.

In a skillet are three homemade tortillas with beef birria, onions and cilantro and shredded Monterey Jack cheese. They will be fried lightly and then folded.

On a round white plank is the finished dish of three birria tacos on the right, tomatoe wedges on the bottom left and in the upper left some of the beef broth for dipping.

Part 2 of beef birria. Tacos! First attempt on these so don't be too harsh. The fresh tortillas are white corn, so you may be more familiar with yellow corn tortillas with birria.

It's a bit of work for sure. The chuck roast was really expensive so I will savor every bit of it.

Just used instant masa. Sopes don't look too difficult. Press them gently they are thicker and pinch a little lip around them while still warm then shallow frying.

Thanks. Once I get a consistent sense of how the dough should feel I'm going to move on to making some sopes.
