if you have a pasta dough that you're need a specific hydration rate, saying 1 whole egg and 4 egg yolks means a big difference when using jumbo/xlarge eggs vs medium. using the language to express eggs as ml or grams would allow you to get a close approximation by specifying size that you have.

frustrating to have someone in your organization doing fuck-all while everyone else is bleeding.

I like the possibilities. Conversions for thing like egg/grade to mL or grams (for like pasta dough) would be a breeze. this is neat.
