I live very close to Chinatown in Manhattan; soft tofu is readily available. I usually get mine from Kong Kee (it’s made on site) but most stores carry it. And I have one of those pots. I use it as a fruit bowl. 😆

Manhattan also has a Koreatown; BCD Tofu is my favorite for Sundoobu.

Soondubu jjigae. Slightly unorthodox ‘cause the tofu is not soft (also, cilantro). But it’s soft enough!

Don’t worry, I mixed the egg in, and it cooked. No one dies of salmonella on my watch, least of all me.

There are no hidden sugars, salts or fats in the tofu I buy (leaving aside that these are not necessarily "unhealthy" at all). I'm mindful that you may not have access to quality tofu, but some of us do.

"Why not make it yourself"

Because I don't think it's worth the effort, and the tofu that's available to me is excellent. Same reason I don't make my own ketchup - Heinz serves me well. This is my main supplier:
