I'm not sure that's always true but when I was learning sound engineering it was all big analogue desks that basically only had mic inputs and you needed boxes to impedance match and convert unbalanced signals (from electronic stuff etc)

A DI box converts a high impedance (Hi-Z) signal to a low impedance Mic input, in the case that you don't have one available (kind of the usual case in live environments, so you'll have them at venues usually).

Only if your audio interface doesn't have an "instrument" or "Hi-Z" input or switch on an input.

It will kind of work in a line input but it will be quieter and higher frequencies will be lost.
