Only over the next couple of months. Once my trees are fully dormant, there's structural pruning and wiring and pot cleaning, etc, and before you know it, it's spring! Stratified seeds is a good idea. If you have fresh you could sow them now. Just make sure they are rodent proofed.

It sounds like you have some material with great potential. During the fall I mostly just enjoy the changes in the trees and start planning structural work I might carry out over winter when the trees are dormant. I like to let them get on with their job of shutting down naturally
