I think I found the answer.

400.6 describes how Darksteel et al. abilities manage to apply when moving from the library. It says that the card's owner looks at it to determine which replacement effects might apply. The card is never revealed, so Grindstone/Palantir/Grist don't know the card.

Unfortunately I couldn't find any old [O] answers from the long ago. Trying to see if I can get someone to dig one out if it exists.

This isn't how I recall Blightsteel interacting with a painter's servant + grindstone situation. Grindstone asks the same question that Palantir does.
