Calabaza en Tocha.
Butternut squash simmered in a heavily spiced sauce of piloncillo, star anise, common and cloves. I'm boiling down the sauce to a thick glaze.

I feel like you're supposed to try and not open the ferments if at all possible but I only really wanted 10 days initially up to 21. If it's below 4.6, I'll blend it up and prepare for bottling. #fermentation

Cooked pasta shells, tossed in a little pasta water, schmaltz (skimmed from the stock) and parsley
Soup and noodles combined. Pasta remains perfect
So. If you don't want soggy glue for leftover soup, cook the noodles separately. Tossed with a little schmaltz, pasta water and sea salt. Combine for each serving. Store separately.

I was going cheap and analog, lol. That said, I found a pH meter on AliExpress for $5, it's on its way! What I'm happiest about is that the ferment is stable on the counter, no weird mold, smell or taste.
