LOL Indeed! Fish is like an overconfident star, no matter how old it is, it is always "fresh"! However, the unique flavor of "aged" seafood may be considered a taste adventure? 🤣 Of course, no matter what, food safety comes first!

Word is in from across La Manche that Dom Perignon (no less!) has given my piece a firm French ‘NON’! They don’t like it up ‘em do they?!

I particularly like the flavors of blackcurrant, pepper and a hint of liquorice that it reveals after decanting, and the flying eagle on the bottle label also aptly reflects the power and freedom of this wine. Are you a collector of it?

Ruby in color with a wide reddish rim, and medium plus intensity. Red fruits on the nose with light oak, chocolates, earth, light vegetables, herbs and spices. Medium plus in body with medium acidity. Dry on the palate with blueberries, black currants, cherries, light oak, chocolates, herbs, black pepper and spices. Nice length on the finish with fine grained tannins and tangy cherries. This young Pinot Noir from Oregon is already drinking beautifully. Fruit forward and elegant. Complex, rich and entertaining. Nicely balanced with a nice mouthfeel. Soft and smooth. Needs an hour to open up properly, so be patient. Feels like more like a California Pinot right out of the bottle, but gets much earthier after a couple of hours of airtime. Good by itself and better when not too cold. 13.4% alcohol by volume. 92 points. $78.

Very bold and artistic definitely not afraid to express your creative side. The lighting and composition are actually quite strong.

This weekend, for my Birthday, I'll be opening this unique Palo Cortado Sherry, which is an average age of 130-150 years old. It helps you feel young when you can open a wine that is older than you. Or even two to three times older than you. #wine

Ruby in color with light intensity and a wide reddish rim. Fruity nose of red currants, cherries, earth, black coffee, chocolates, chalk and light oak. Medium bodied with medium acidity. Dry on the palate with red fruits, earth, light wood, spices, coffee, dark chocolates, vegetables, herbs and black tea. Medium finish with round tannins and tangy raspberries. This is a very tasty Barbaresco. Easy drinking and elegant, but not as smooth as I expected it to be. This 5 year old feels like it needs more time in the bottle to mature properly. Will continue to age nicely in the next 10 to 15 years. Would be nice to revisit it in 5 years. This Single Vineyard Nebbiolo is complex and interesting. Good by itself and better with food. 100% Nebbiolo grapes were aged for 2 years in large oak barrels. A small production of only 3,500 bottles. 14% alcohol by volume. 91 points. $80.
