100% whole wheat bread!
I soaked flour with buttermilk from the butter I made (seen in crumb photo) and did a biga, then i kneaded it all together with a little flour with salt and instant yeast mixed in, and incorporated honey and melted butter. Baked in dutch oven then no lid.

Best. Lobster. Roll. Ever.

It’s the 2nd time in a week there’s been a power outage on the subway and it’s been an insane pain in the ass commute but while I was fuming and walking in 90 degrees, I passed Liberty DeVito (Billy Joel’s old drummer) in downtown Bklyn and I got to tell him how much I loved him & he said thanks!!!!
