bar area, most people that love a chat, or love meeting other patrons, or watch a game on TV will prefer the bar area than a table off on a corner. Also, people seated at a bar counter tend to buy more because they can't hide and sip slowly like it would be with the privacy of a table.

In the industry, we call new faces "New money", and then there's your regulars. And the rule of thumb is you're supposed to look out for 60% regulars within your crowd, and 40% new money.

New money means your great service, vibe, aura around the facility is getting you good attention and new people

Understanding the demographic of customers you have is important. Sometimes the vibe gets old, and people look for something new.

You should regularly go to your competition (anonymously) and see what they are doing right to bring the numbers in. If you can't be creative, be quick to copy.
