Two main reasons;
- I've learned how to cook with whatever's in the fridge
- I prefer the food I grew up with (like most people) although I've got a lot more culinary cultural options than my forebears. Their meat-and-three-veg becomes my curry, or stir fry, or carbonnade, from scratch.
Same. We relied on my grandparents for much of our dairy, eggs and (through the country barter system) meat, as well as veg.
It's such a privilege; I never saw it at the time, of course, and was envious of kids whose lunch contained packets and sugary stuff. But I think it's served me well.
Oh, you know ... the usual.

Not every educated person knows everything. Maybe in the 20th century, when there was a limited corpus of knowledge, that was possible. But these days, knowing how to find and rate answers is more useful than knowing individual things.
I've covered a lot of protests: Save Albert Park, Richmond Secondary College, the 98 waterfront dispute.
Some were rugged affairs.
Shields, batons, horses.
But I don't remember punching.
3 or 4 officers laying into a pinned victim with fists.
Without uniforms, there'd be jail terms.
