People will make art no matter what, it's part of being human.

Yes some people sell art to make a living, but those who buy art and are willing to spend a lot on it do so because it resonates---it connects individually and culturally w them. AI doesn't do art, it just rehashes what already exists.

My economics is rusty,

Putting ethical arguments aside & assuming the quoted premise this would lead to an oversaturated otherwise perfectly competitive market. If demand isn't changing but supply increases, it would drive the price per book down to the point where it might not even be profitable.
