This cheese is fun because it’s not homogenized, so you get pockets of butterfat here and there. It’s also wiped with brine at the very end, which gives me a feta vibe. Plus it’s a raw milk cheese, so you get some coastal Massachusetts terroir.

Hosting donuts and cheese class at Antonelli’s today. I think my fave is the Barely Buzzed + maple donut.
