1 T butter
1 T yellow curry paste
1 cup coconut milk
1 T soy sauce
1 can kidney beans, drained, rinsed

Melt butter over medium low heat in small sauce pan. Stir in curry paste. Cook, stirring, until very fragrant. Stir in coconut milk, soy sauce, beans. Cover,cook on low heat till heated through

The rice:
1/2 cup rinsed rice
1 cup water
1 T butter
1/2 t salt
1/2 t pepper
1 scallion thinly sliced
1 clove garlic minced
1 red jalapeño minced
10 yellow, cherry tomatoes split

Stir all together in a sauce pan, bring to a simmer. Cover. Cook 13 minutes. Remove from heat, rest 13 mins covered.
