I try to keep it simple.
It's easier to pass on takeout when I promise myself I'll have my fork in hand 20 minutes after I walk in the door. 6/6
No lemon? I'll use balsamic or white wine vinegar.
No avocado? I'll use a bottled salad dressing instead of the lemon juice.
I can change up the protein with pork tenderloin, egg salad, or ground beef & cheddar. 5/6
While that's cooking, I fill a big bowl with 3 fists full of spring mix.
Squeeze 1/2 a lemon over the greens.
Open and cube an avocado onto the greens. Sprinkle with salt and garlic & onion powders.
When the chicken's ready, I cut it into bite-sized pieces and add to the salad. 4/6
Bring to a boil over med heat, boil uncovered for 5 mins, then cover and turn off the heat (leave on burner) and let sit for 5 - 8 mins.
You may need to experiment a bit to get the right cook time for your stove and the size of the breasts you buy. 3/6
Slice the breast into 2 thin filets.
Place in a pan with about 1/3 cup of broth.
Add a couple of peppercorns and a bay leaf to the broth.
Sprinkle chicken with salt and Italian herbs.
Top with an aromatic (onion slice, smashed garlic clove, or celery sprig) 2/6
I keep it simple with spring mix, lemon juice, and an avocado (salt, garlic & onion powders for seasoning) all topped with a protein.
Poached chicken breast is a favorite protein (recipe follows) 1/6
I'm down 70 lbs (31.75kg) without counting calories.
Once you have a decent menu of low carb options, you won't even need to count carbs.
