If you press with floured finger and it bounces right back itβs not ready. Bounces slowly itβs ready. Doesnβt bounce itβs over done but yummy.

But for overnight proofs Iβve always used plastic wrap in fridge because itβs a better seal (I assume?). In Forkishβs books he calls for room temperature overnights in plastic tub. Covering prevents a skin on the dough.
