I have no idea what the current Star Trek canon is now, but it used to be that Kirk was captain of the Enterprise for roughly 4 or 5 years before they went on their 5 year mission, so I guess they could do the pre-5 year mission years...but that was essentially what the first 2 Abrams movies did...
