I freeze them in cubes like this. This is my last portion of the sauce paste so I'll have to make more soon to have on hand.

Continuing to clean out the freezer as more harvest rolls in. Now prepping potatoes and kale from the garden to join some chickpeas in this incredible masala sauce. It makes 4 portions at once to freeze for convenience.

Note: add cayenne, it's not spicy enough.

Cucumbers and eggplant. The few cucumbers I did get before the plant completely crisped up were bitter. My eggplant never bounced back from the flea beetles this spring.
