You can try a more muted RPG. The saga series is on Steam, and the older games like Romancing Saga Three and Saga Frontier might have that feel you are looking for. However, if you're looking for something more niche and horror experience, you might want to look at emulation or RPG-maker horror

Kazuya Niinou of Etrian Odyssey explaining the concept of using imagination to flesh out the story of a relatively small and simple dungeon crawler, treating numbers and stats and guides to construct personality and so forth.

Actually thinking a bit more about the like, voice or vibe of an RPG and it made me remember this quote regarding Etrian Odyssey that also applies to Dragon Quest and other similar games, where they offload character writing directly to the player's imagination using game design as a tool.
