Description: A glass casserole dish of baked chicken and rice, with cooked onions scattered on top. It is sitting on a heatproof platter on a kitchen counter. “East Texas” Chicken and Rice 3-4 chicken thighs, bone and skin on
2 cups chicken broth or stock 1/4-1/2 cup chopped yellow onion A few shakes chili powder 1 cup white rice Preheat oven to 375°F. Once it’s heated, place the chicken pieces in an oven-safe glass casserole dish, and bake for 15 minutes. While it’s baking, boil the 2 cups chicken broth; once it’s boiling, turn the heat down so it’s still bubbling, and add the onion and some chili powder. Remove the casserole from the oven, and place the chicken pieces on a plate. Spread 1 cup of rice on the bottom of the casserole. Pour most of the chicken broth mixture over the rice. Replace the chicken pieces in the casserole, and pour the rest of the liquid over it. Cover the dish with foil, put it back in the oven, and bake for another 30-45 minutes. It is done when the rice has absorbed just about all of the liquid. Leftover rice is wonderful as stir-fried rice.
