yep, been there, don't worry, still safe to eat (assuming there is not some other, actual spoilage happening). anecdotally I don't get the blue color when I'm fermenting paste vs. whole cloves

in peak garlic season i buy a ton of the best shit i can find, blend it to a paste, add 2% salt by weight, ferment for a few days at room temp and then it goes to the fridge to get me through the garlic "offseason." fun ingredient and can replace fresh garlic in lots (but not all) applications
