The Matticks were arrested after police intercepted a 26.5-ton hashish shipment in 1994.

I know western chefs apply the principle that acidity is necessary to balance rich food but I find many western treats lack the tonal variety of Asian dish. Poutine, mac and cheese, cheesecake come to mind. Great food but after a while, you crave something different on your palate.

A dish that some westerners don't get is bánh cuốn, which they find goey and bland. But if you eat it properly with the sauce, the bland rice rolls are contrasted by the sweet-sour nước chấm, the soft is balanced by crunchy fried shallots. This ensures you don't feel "ngán."

Vietnamese food has a concept I don't often see in western cuisine - "ngán."
It's translated as being bored but applies when your palate is dulled by the sameness in texture, taste.
We want our food to hit different notes. A bánh mì is simultaneously soft and crunchy, spicy and cool, fatty and sour.
