At 5:00 when they say he's a "western" person, it means he's from southwest Vietnam (Miền Tây) aka the Delta.
And at 9:55 the "lumpy skin cake" is Bánh da lợn, lit. pig skin cake, because it's chewy and has layers, but there's no pork.
