Yesterday's sourdough was super wet. Today's is very dry. I've been incorporating more water during the folding process. Almost to window pane! Then I'll do the batch rise.

I also knitted some wonky assed slippers. Good practice though.

I made my own sourdough starter from scratch. I named her Edith after an aunt of mine (RIP). Had the idea to add about a Tbsp of sourdough breadcrumbs to inoculate at the very start and it worked incredibly well. By day 4 it was pretty much ready. Will use it today or tomorrow. #speirgorm #sourdough
