I’ve gone to getting the biggest turkeys I can, so I can make even more enchiladas. It’s a really great lazy-dinner I can decant occasionally over the next year.

I’ve done these for ten years now. They’re never not a hit. In case you tire of turkey noodle soup.

Filling 2-3 lbs leftover turkey 1 onion 1 bunch cilantro 8-10 oz Cotija cheese 16 oz Hatch chile Finely chop all ingredients, should make about one gallon of filling. Let meld while you prepare sauce.

Sauce 1/2 c salad oil 1/2 c flour 4 T Grandmas chili powder 4 T chili powder 1 t cumin 1 t oregano 1 t salt 2 garlic cloves chopped 12-14 c Turkey stock Splash apple-cider vinegar Cook flour oil and seasoning over low heat. Add garlic. Gradually add stock. Simmer 30 mins. Start pre-cooking corn tortillas (see below).

Assembly 9 8”x8” foil pans with lids 54 corn tortillas Oil 3-5 lbs shredded cheese blend Cooking spray Paprika Cilantro or spring onion, chopped Sauce Filling Ladle 1/3 c dry measuring cup

Pre-cook corn tortillas on lightly oiled surface. Spray foil pans with cooking spray. Dip 6 tortillas into sauce at a time, add to pans. Use 1/3c measuring cup to scoop filling into tortillas and roll to fill pan. I usually do five one way and one on the side. (Tip: after you’ve rolled three, move the rest of the tortillas on top of assembled enchiladas). Repeat until assembled. Ladle remaining sauce evenly over pans. Cover in cheese. Garnish with paprika and onions or cilantro. Spray lids with cooking spray, affix to pans. Freeze. Use within one year.

Nine 8”x8” foil pans full of enchiladas, covered in shredded cheese blend and garnished with smoked paprika and spring onions.

Leftover. Turkey. Enchiladas.

Best thanksgiving hack. Hands down.
