25 is many, many, MANY more than usual. I experienced more quakes TODAY than the previous 15 years combined.

Today in local earthquakes:

Pantry “before” (in progress, actually) photo. Disheveled shelves full of mismatched containers. Boxes stacked are obstructing view of most shelves.

“After” photo. Shelves full of labeled mason jars. Much clearer path to all products.

Pantry re-org is complete! I spent over a year agonizing about finding containers to fit on these shelves.

The answer? Mason jars. I guess this means we’re going full cottage-core in 2026.

Bold choice - since we’re in a seismically active geography - but that’s a problem for future-me.

I’ve never worked out fresh water chestnuts before. They’re not very easy to process, but PACKED with flavor.

Of course, I did mine slightly different from the instructions: used seafood stock instead of chicken, added MSG and bell peppers, omitted basil because I didn’t have any fresh. But excellent-excellent use for leftover crab.

It’s crab season, so I made stock from all the crab-shrapnel then Tom-Yum with the stock.

Acceptable for a first attempt. Not inedible, but not quite what I wanted. Good heat level, but something not yet right about the spice mix.
