Opinion | Food Tourism Is Dead. But Something More Interesting Is Emerging. (Gift Article) The world’s next great cuisine isn’t hidden in some undiscovered corner of the globe. It’s in the spaces among cultures, traditions and technologies.

In which the author claims new territory as if Jonathan Gold didn’t spent decades writing about this. As if Roy Choi’s Kogi truck didn’t roll in 2008.

Interesting commentary at the end about how obtuse many bars have become with complicated methods and ingredients and how this can be potentially limiting in terms of access and affordability

If I leave it out on the counter my cat will jump up and eat salted butter but never messes with unsalted butter so this is how I know it’s better for everything

Alright who let the bartenders get ahold of the culinary foam gun again? This is why we can’t have nice things

Was talking to woman who a was a bartender at Pianos in LES in the 2000s and said they had a guy who’s full time job it was to keep the coke line moving through the bathroom so that people could actually urinate

I wonder how things like Malort survived all those years without the internet? I mean, how many Chicago bikers can there be? Or did your Edison Park grandmother give it to you when you were sick?

Love Sam, love to see rum cocktails outside of the tropical category. Given this areas deep (and troubling) colonial legacy with rum you’d think people would be interested outside of something that has a parrot sticking out of it

Cambridge's Brick & Mortar to Become Italian Aperitivo Bar After 13 years, it'll get a revamp: Acqua & Bocca debuts in early 2025.

Bad news: Acclaimed #Cambridge bar Brick & Mortar is closing soon.

Good news: Its replacement, from the same team (including @kitchensnacker.bsky.social), sounds great! Acqua & Bocca, an intimate Italian bar celebrating apericena culture, will open soon.

Struck by how in the radical 60’s every active group - Black Panthers, student activists, gays, socialists, etc would have been totally on board with shutting down the FBI. Now 50 years later and MAGA wants to blow it up and the left suddenly finds meaning in the institution

Was also struck by how hyper sexualized the daughter character, Ainsley was written. As a sexual foil in her dad’s house, with his roommates … as a high school student?! Creep show

It is a great read. I canvassed for Harris in Maricopa County and two of my friends volunteered in Philly and this was parallel to all our experiences. Nobody with boots on the ground and a little salt in their hair was optimistic after about the election after hitting the streets

One issue with this doc is that it separates the music from the fans.

Only your worst nightmare feather haired high school football jock head looking to twirly a geek in the locker room bathroom blasted Toto in the parking lot

Favorite moment in the play Stereophonic was a throw away prop box of Winchell’s Donuts onstage. Was the go to donut shop in hippie late 70’s California. Nice touch.

This is why cooks always have terrible diets. You satiate yourself with tasting throughout the shift and then go home at 12 AM and eat half an old Italian sub out of the fridge

My favorite one we do is called the Surfer Rosalia and is 2 parts Mahon Gin, 1 Part Lustau Palo Cortado, 1 part Magdala Orange Liqueur from Torres

(all grape based)

We’ve been repping various 50/50’s for a year now. Because they are delicious and lower ABV. But haven’t found a lot of adoption because when Americans want a martini they just want to get fucked up

Classic cocktails almost universally are simple because they need to be easily replicated, no smoke and mirrors, but so many are also best made as equal parts cocktails. I wonder why?

Went to Scarr’s Pizza yesterday. It was good. I enjoyed sitting out front, eating pizza on the street, people watching. Lots of nerdling around about the best slice. Pizza is not a Platonic form. There are levels, magic even, but it’s just a moment, a pop tune.

Okay, I’ll try this for a minute. But let’s just talk about Dennis Hopper’s photography, how to cook an egg depending on your morning disposition, Louisiana Hot Sauce, why champagne isn’t normalized, al taglio pizza, bowline knots, wooden roux scrapers, a cold can of Bud in a hot shower
