you can pretty easily boot a Linux distro from USB. there's a lot of good tutorials out there.

if you're an "old school" win7 person? I'd look for a distro with KDE Plasma for the desktop environment. maybe Kubuntu?

KDE is full-featured but really snappy

what you're describing sounds 100% doable on Mint. and on 12 year old hardware it'll probably be an upgrade! Linux is much faster...
