Lack of demand? For certain tasks (coding, learning, assistance in real life tasks) you want to use the best available model. Even currently, Claude and ChatGPT are both ahead of open models.
For other tasks (need cheap tokens, privacy or your own fine tune, etc) we use open models a lot.
