ok so jollof rice is incredible, why don’t we eat this everywhere. I’m not 100% sure what spices were on the prawns, but they were unbelievably delicious too, and that pile of dried spices on the plate really took it to a whole new level

getting in to some of the local delicacies in Lagos. First up, Amala: yam flour with water added until it becomes a paste. Pepper, spinach, tomato sauces + beef on top. Very tasty, wouldn’t have minded a bit more spice.

Next up: dinner of jollof rice

at the risk of sounding a bit soppy: I have just boarded a flight from London to Abuja, a thing that if you told 17 year old me would be happening, 17 year old me would have said β€œno, what, huh?”.
