I'd say those are 8-input analog mux chips (like a 4051) since they're cheaper than ADCs

The circuits I've seen is you don't. The hall effect sensor parts live on the PCB and output an analog voltage. So you've either got several analog muxes (e.g. 4067 or similar) or multi-channel SPI ADCs (e.g. MCP3008 or similar). No matrix; instead, analog fan-in.
