Simmer until the chickpeas have softened a bit, the liquid has reduced, and the broth has been thickened by the starch from your chickpeas. Season with salt and pepper to taste. You'll need 2+ tsp of salt, depending on your broth, sausage. You can batch cook it. It's good over rice.

Saute the vegetables until they start to soften- probably 5-10 minutes. Drain and rinse your chickpeas, then add them and the sausage in, and the dried fruit if using. Saute for another 3-5 minutes, then add the stock (bouillon in water, ramen packet in water, whatever) and bring to a simmer.

Heat oil in a medium pot on medium-high heat until shimmering. Add your ~sausage and saute until browned and it's released some flavor into the oil. Set the ~sausage aside. Bloom your spices in the oil for about 15-20 seconds, then add your vegetables.

- 1 medium onion
- bouillon cubes or better than bullion, or 16 oz of chicken/veggie stock or broth
- neutral or olive oil
- salt, pepper, smoked paprika; it's pretty flexible around spices. I like doing a sage/turmeric/fennel/allspice blend.
-optional: dried fruit like raisins or chopped up prunes

Chickpea stew:
-two cans of chickpeas (I think the typical can is 11.5 oz)
-3-4 medium carrots, more if desired
-1 non-green bell pepper
-~4 oz of sausage- I love the Costco kam yen jan for this, but Italian sausage, veggie sausage, bacon etc can work. Something salty, smoky.
