Dumplings in Europe date from the Middle Ages and they very well could have come from China by way of intermediaries. I don't know the history of the other dishes on the map. But there was a lot of intercultural contact in the Middle Ages and the Mongol Empire was in general a key part of that.

Yes, that's right. I only ever heard "nitch." The pronunciation "neesh" was considered British. It doesn't surprise me that Canadians also said it that way; Canadian English can be a bit of a mix between the two. I remember being surprised at the way Robert MacNeil pronounced "Renaissance."

Historically there have been cultures that kept the remains of dead loved ones in the home with them. It will be interesting to see if our culture evolves in that direction except with digital remains.
