This wasn’t my first time tenderizing the thinly cut beef, or feathering it, but it was my first time “passing through oil” effectively, and my gosh it added up to some righteous textures and flavors. Pepper Steak and Beef & Broccoli with plain Lo Mein!

Cranberry sauce is cooked, collards are cooking, and succotash is going now as well. The pies will be started soon, and then it’s prep for tomorrow’s cooking.

I’m helping premiere a piece this weekend, and after not playing seriously for over three years (Covid, father’s death, depression), I have been getting through the piece just fine, but did a miniature routine today. I forgot how good that warm chop feeling was!
