There's no two ways about it: Eating more beef is bad for the planet and the climate.
Importing beef = exporting US climate impacts. Despite the hype about local food, both grass-fed & industrial beef are destructive and flawed systems.

And why does it have a supposed monopoly? Because changes to tax law made the bulk of the wealth of some America's wealthiest people untouchable in the form of foundations.
You want to get really crazy? Change the law so foundations have to release more than a tiny percentage of their principal.

I think itโs good for the students and my mental health that I reorganized the class to be 1/3 on state and regional policies. Really difficult to contend that policy and science expertise matter at the federal level at the moment (letโs not even talk about legal expertise, precedent etc. etc.)

For me, a similar revelation was when academic institutions in red states very quickly mandated policies that went against the best available science (no mask and no vaccine requirements, limited to no accommodations for people with disabilities or caring for such people). Still with me every day.

Itโs really hard to teach how science works when the scientific process is dismissed and buffoons are in charge. Teaching with a nuanced approach - where one centers stuff like structural inequities, Traditional Knowledge and implicit bias is a lot at the moment (ask me how I know lol).
