3 bandaids, a lost bolt on poultry shears, dishpan hands from too many dishes washed, a singed handle wrap for cast iron pan.

But I won. Spatchcocked turkey 🍗 turned out well. Parents were highly complimentary at our celebration earlier today. 🏆

Post-kitchen chaos- what I messed up and what I learned.

1. Added aromatics too soon

2. Roasting anything at altitude ~6500ft takes LONGER

3. Oven off by about 25deg

4. Post-COVID loss of smell/taste impedes seasoning anything

5. YouTube recipes don’t match what’s online

6. More bandaids

Spatchcocking a (mostly thawed) 20lb turkey - not easy, folks! 👩‍🍳🔪

The carcass is now dry brining. 🧂🧂🧂

Roasting veg 🧅🥕🧄 and other turkey 🍗 bits for stock and then gravy.

Dressing breadcrumbs 🍞are dried out and awaiting action. Tomorrow, my pretties.

Kitchen is a disaster. Ugh. 🪣🧹🧽🫧

He wrote a tremendous book “Robert E. Lee and Me: A Southerner’s Reckoning with the Myth of the Lost Cause” — it explained and clarified the stubborn beliefs that persist in my (formerly) southerner & Confederate-serving family.

Turkey defrost (in fridge) commenced!

24 hrs for every 4-5lbs.

Then, Dry Brine 24-48hrs (also in fridge).

Roast.

I will enjoy it next Thursday despite family making other plans, which I will not be joining.

IMO ‘Karens’ only stand up for themselves, usually wrongly.

Fml… popular fast food restaurant included sauces for my salad that I didn’t request. Silly me, read the allergens line and not the ingredient list.

Not life-threatening but it’s gonna be a miserable afternoon..

Truth! If she has it, he wants it.
And he has all sorts of ways to snatch it - bark at the front door when no one is there so she comes running or grab a different toy to taunt her with it and then snatch hers.
And sometimes, I call ‘trade’ and they swap nicely.

Scene 1: Two huskies lying nose to nose with somewhat obscured toy between them.

Scene 2: seconds later, two huskies lying nose to nose turn their heads slightly to contested stuffie, positioning to either keep control or snatch it.

Scene 3: large husky boi making his move to snatch stuffie from Sister husky while she stares hard at him. Their noses are about 1” apart.

Morning meeting : slow motion snatching of beloved stuffie.
Result: large husky boi successfully snatched that stuffie and ran outside.

Started on garage clean-up today. 📦🧹🗑️ Ugh.
Kitchen gadget, dishes, misc is next. Then the basement storage area.
So many donations, things to sell, things to free-cycle IF I can tolerate the clutter.
5.5 years in this house 🏡 and it’s time ⏰
